A perfect balance between earth, man and machine, which translates the essence of the fruits coming exclusively from our olive groves, in the prestigious selection of Decimi Oil.

A strict, scrupulous, and highly selective control that Graziano Decimi, oil craftsman, personally performs for all the steps of the production process, up to the bottling phase.

An accurate and constant work of study and research, which has led the craftsmanship of Graziano Decimi to join in the experimentation of innovative solutions together with the company MORI-TEM. This technical partnership has developed cutting-edge and non-invasive extraction methods, to naturally and mechanically extract from every single “Olive” the healing and flavour potential that only this fruit is able to offer.


The harvest is carried out between October and November at the right moment of veraison of the olives, separating the different cultivars.

Subsequently, in case of very hot weather, the freshly harvested olives are taken to the cold room to block any fermentation process.

The milling, which takes place within 4 hours of harvesting, begins after a careful selection of the olives that are defoliated and washed.

The transformation process continues with our state-of-the-art two-stage Mori-TEM crusher. The numerous technical devices and the continuous innovative research allow us to obtain an extremely controlled cold extraction, with procedures that always avoid uncontrolled side reactions.

Finally, the storage of the oil allows us to preserve the quality of the oil, thanks to steel containers constantly under nitrogen, protected from light and at a controlled temperature, so that the product maintains its characteristics and aromatic freshness unaltered.

There is an indissoluble link between the place where the olive trees grow, the land that feeds them, the technology used and the manual skills of man. And it is only from this bond that great extra virgin oils are born, those with organoleptic characteristics (aroma and taste) of the highest level and healthy nutritional qualities. Our idea of quality is “holistic” – quality that benefits man in his entirety (mind, body and spirit), because only high-quality extra virgin olive oils can be considered real healing elements within a healthy and correct diet, rich in polyphenols and antioxidants, precious allies of our wellness.


In our oil mill, eco-sustainable processing routes

The love for the fruits of our land also comes from the need to protect it and treat it with respect.

In our mill, in fact, everything that does not become extra virgin olive oil becomes a resource.

Thanks to the special system, the olive pits become a natural fuel with a high energy yield, used for domestic and business heating. The rest of the waste is instead recycled for the production of biogas.

The sun allows all phases to function: thanks to the use of photovoltaics, the mill is energetically self-sufficient, thus allowing it to work in full harmony with the resources of our planet.
